This is a great diabetic recipe to keep the entire family on a healthly diet.
• Vegetable oil
• Pinch of salt
• Chicken
• Onion
• Pasta (cooked)
• Peas
• Broccoli
• Fresh button mushrooms
• 3 table spoons of mascarpone or low-fat crème fraiche
• Grated parmesan
Heat two table spoons of vegetable oil in a pan. Add the onion and sauté for several minutes.
Add the chicken and cook over a medium heat. Meanwhile, slice the mushrooms and add them to the pan. Stir the ingredients together and ensure that the chicken is browning.
Season with a pinch of salt and some pepper and continue to stir.
Simmer on a low heat for 5 minutes.
Add the peas, broccoli and pre-cooked pasta. Stir over a low heat.
Bring to boil for 10 seconds then serve with a sprinkling of parmesan.
